You may need more or less water, depending on the size of your eggs or the age of your flour. The dough should be not too runny, but also not firm. You can see the exact consistency from the video here: https://www.facebook.com/watch/?v=10154668030013462Boil a big pot of salted water. To make the nokedli you can either use a special nokedli-maker or the other side of a flat cheese grater.Cook in batches so not to overcrowd the pot. After about 1-2 minutes the nokedli will float to the top and this means that it is ready. Strain the pasta from the water and put it aside.In a large frying pan melt the fat or warm the oil. Put in the freshly cooked nokedli and warm through for around a minute. Beat the remaining 3 eggs in a bowl and then pour over the warm nokedli. Use a low-medium flame and stir quickly. You are looking for a "sauce" that is creamy and just a little runny.Serve the nokedli warm with some pickles or a traditional Hungarian side for this dish: lettuce with vinegar. Indian Mutta Chaya (Egg Tea):Ingredients1 tsp tea leaves 2 cardamom pods1 star anise 2-3 clovessugar (2 or 3 tsp)1 egg¼ tsp vanilla extractDirections:Steep tea with spices and sugar. While tea is brewing, whisk egg with vanilla extract. Filter the black tea , when it is really hot , then add the whisked egg to the black tea and mix it well (better use the traditional Indian way using 2 cups). Mixing needs to be done really fast else it will look as if separated. Serve hot.Seychellois Salad Dizef ek Zariko Ver (Sour Egg Salad with Green Beans): Ingredients5 hard boiled eggs, thinly sliced2 cups green beans, blanched and chopped into 1 inch pieces1 medium red onion, cut in long thin strips3 tbsp extra virgin olive oil5 tbsp apple cider vinegar1/2 tsp black ground pepper1/2 lemonsalt to tasteDirections: Soak the red onions in salt water for ten minutesIn a mixing bowl add green beans, sliced up eggs, oil, vinegar, pepper and salt to tasteRinse onions, give them a squeeze to get out extra water and add to mixtureAdd juice of half a lemonMix gently and eat over rice or enjoy it by itself!
